Hi Sara,
You are well-situated to find out more about the Monterey Institute of International Studies in Monterey, California. It's one of the pioneering institutes in this country for translation and interpretation, and you can actually earn an MA in T&I or in conference interpreting.
Caveat: it's pricey by any standard, and I don't think they have a good financial aid program (they didn't by the time I had finished there in 1995), but if you make it through the program you will be very well prepared to stake your claim in our strange industry.
There is also a program at the U.C. Extension School in San Francisco, which you may want to check out because some very fine pros are instructors there and although it's relatively new, it's also definitely more affordable.
Good luck in your quest!
