Everyone I talk to says that court interpreting pays the best. I am a good interpreter (Sp.-En.)but there are lots of legal terms I don't know in either language. How do I prepare myself to become certified, and get involved in court interpreting without putting my whole life on hold, moving to southern CA and going to their court interpreter's school?

You may try to read some books on law.
